The other day I posted about using a crockpot to make something other than dinner. Last night I got brave and decided to do an overnight oatmeal. I was a little nervous, but waking up to the smell of cooked apples was nice and being how it was frigid this morning, a nice bowl of oatmeal hit the spot! This recipe is from Gooseberry Patch's Flavors of Fall:
Ingredients:
1/4 c. brown sugar, packed
1 T. melted butter
1/4 t. salt
1/2 t. cinnamon (i did a little bit more because I like cinnamon)
1 c. quick-cooking oats, uncooked
1 c. apple, cored, peeled and minced
1/2 c. raisins (I used craisins because that's what I had)
1/2 c. chopped nuts (left these out because I didn't have any)
4 1/2c. milk ( I just used 4 c. because that is all I had left)
Place ingredients into a greased slow cooker; mix well. Set on low heat overnight, about 8 or 9 hours; spoon into bowls to serve. Serves 4.
When I woke up this morning I thought it was still a little soupy for my tastes. However, I didn't add nuts, I only had 1/4 c. craisins & I realized when I was typing out the recipe that it was 1 CUP of apple, I only used 1 apple, so that was a lot of stuff to thicken it out more. I just shut off the crockpot, added a little bit more oats & let it sit for a bit. It thickened up to my liking within a half hour or so and it is DELICIOUS! I will definately be making this often!
