Snickerdoodle Muffins

Last week a friend of mine posted about these muffins.  I love Snickerdoodle Cookies & when I saw this RECIPE I knew I had to try them out!

Ingredients:

2 cups flour
1/2 tsp. salt
2 tsp. cream of tartar
1 tsp. baking soda
1 stick butter, softened
3/4 cup sugar
2 eggs
1 cup milk
1 1/2 tsp. vanilla
1 Tbs. sugar + 1 tsp. cinnamon for topping

Directions:

In a bowl, stir together dry ingredients:

In a seperate bowl, cream together butter & sugar.  Add the eggs.  Add the milk and vanilla.  Mix until well combined.
Stir your wet ingredients into the dry ingredients and combine:

Grease a muffin tin and fill the muffin cups about 2/3'rds with batter.  I got 18 muffins out of the recipe.  Sprinkle with the cinnamon sugar.

Bake at 400 degrees for about 15 minutes.  I found mine were done at about 12 minutes, as I have a very hot oven.
