I absolutely love these rainbow cupcakes! They were slightly time consuming, but the look on the kid's faces when they bit into it was priceless!
I followed the recipe from The Girl Who Ate Everything's blog. Since making these cupcakes, I now always add dairy to my cake mixes in place of water. It adds such a creamy texture to your cakes! Also, another note - I found that to get an even "rainbow" it took 2 tbsp of each color in your cupcake liner.
Some other yummy looking rainbows:
We made a rainbow cake once and it was so much fun. My 3 year old and I had a blast mixing up the colors together. I love the colored pancakes. That would be neat!
