Rainbows

I don't know about where you live, but here in Central NJ it is cold, rainy & just down right dreary!  It could be worse with feet of snow, so I won't complain too much!!!  How about some thoughts of sunshine to cheer us up though?

I absolutely love these rainbow cupcakes!  They were slightly time consuming, but the look on the kid's faces when they bit into it was priceless!

I followed the recipe from The Girl Who Ate Everything's blog.  Since making these cupcakes, I now always   add dairy to my cake mixes in place of water.  It adds such a creamy texture to your cakes!  Also, another note - I found that to get an even "rainbow" it took 2 tbsp of each color in your cupcake liner.

  1. We made a rainbow cake once and it was so much fun. My 3 year old and I had a blast mixing up the colors together. I love the colored pancakes. That would be neat!

  2. I make cupcakes with cream cheese. it's so delicious and creamy! Those pancakes look yummy too but I'm a sucker for pancakes for sure!
