Lemon Grove Chicken

Ever want a chicken dish that is cheap and easy?  Yet, tastes like you put a lot of time and effort into it?  This is the one! 

Lemon Grove Chicken from Gooseberry Patch's "Ready, Set, Eat" cookbook

Ingredients:
1-1/4 lbs. boneless, skinless chicken breasts
1/4 c. all-purpose flour
1/2 t. pepper
1 T. oil
1 c. chicken broth
2 t. salt-free herb seasoning
2 T. lemon juice

Lightly coat chicken with flour; sprinkle with pepper.  Heat oil in a skillet over medium-high heat.  Add chicken; saute 3 to 4 minutes per side, or until golden.  Add broth and seasoning; cover and simmer for 10 minutes, or until chicken juices run clear.  Arrange chicken in a serving dish; set aside.  Bring broth in skillet to a boil; cook and stir until slightly thickened.  Stir in lemon juice; spoon sauce over chicken.

Makes 4 servings.


Delicious!  I didn't add the herb seasoning because honestly I had no clue what that was & I didn't find it needed anything extra seasonings added to it.  I used some steamed Bird's Eye potatoes I had in the freezer to round it out, but I think mashed potatoes would have been so yummy underneath the chicken!
