Whole30

I am currently doing a challenge called the Whole30.  I have a tremendous amount of weight to lose & since having my daughter 2 years ago I have been struggling.  I've been on a real downward spiral with my body image & confidence and I needed something to save me.  I have seen this floating around the blog world and internet, so I figured what do I have to lose???  It's way more than a diet.  It's a lifestyle.  It is along the lines of eating Paleo.  For 30 days you eat nothing but meat, fish, veggies, fruits, good fats.  No to sugars, any and all processed foods, alcohol, grains, legumes, dairy, white potatoes.

I am on Day 6 and I am feeling really good.  I am really eager to see what the next 24 days have in store for me!!!

At first it sounded really challenging, but then once you get into a groove & a routine, it isn't that bad at all!  In fact, it feels really freeing to see a cookie & not HAVE to grab it and eat it and then eat 10 more.  It feels freeing to have a delicious meal in front of me and KNOW when I am full.

I'd like to share some of the things I have been eating with you.

Mason Jar salads:

I prep all of my veggies upon buying them & then I portion them out into mason jars.  The jars keep them fresh & crisp for a whole week & everything is all ready for me.

Egg Muffins:

I use my Pampered Chef Brownie Pan to create these yummy bites.  In bowl, I crack a dozen eggs.  Add my favorite ingredients -- frozen pepper slices, chopped onion, tomato.  Then I portion them out into the brownie pan.  Cook at 350 for about 20 mins or the eggs are set.

Citrus Glazed Salmon with Avocado Salsa:
